Introduction

Number of Servings: 4

Ingredients

    1/2 cup of tomatoes (diced)
    1/2 cup of onions (diced)
    1/2 cup of cucumbers (diced)
    1/2 jalapeno pepper
    1 tbs of cilantro (chopped)
    2 limes (juice)
    1 can of Clamato (about 2 cups)
    1/4 cup of ketchup
    16 large peeled, devained, cooked shrimp
    1 oz of orange soda
    Salt and pepper
    Tortilla chips (about 2 oz)


Tips

Don't add the avocado until everything else is added so it won't get mashed.


Directions

Cook the peeled, devained shrimp in boiling water until they are pink and cook through (about 5 mins.)

Chopp and dice all the veggies.
Add tomatoes, onions, celery, cucumbers, jalapenos, cilantro and lime juice to a bowl and mix them up.

Add the clamato, ketchup and cooked shrimp to the vegetable mix and mix them up.

Add the soda, salt and pepper. Give it a stir.

Finally add the diced avocado and serve. Serve with tortilla chips.

Serving Size: Makes 4 1-cup servings
