    Sweet Potato, Medium, 1, skinned and cubed
    Carrots, Baby, 2 oz, cut into sticks
    Granny smith apple - 2/3 med. apple, cubed
    Brown Sugar, 1 tbsp
    Cinnamon, ground, 1/4 tsp
    Imperial, Margarine, 1 Tbsp
    Chicken Breast, 2 oz, bone and skin removed
    Tomato, Petite Diced, 1/3 cup
    Lemon Juice, 1 wedge yields
    Chicken Broth, 1 fl oz


I used the slow cooker because I slow cooked chicken. You can just use a pan/roaster which will reduce the cooking time.


Preheat slow cooker on high. Add diced tomatoes and chicken broth to slow cooker. Place chicken breast on top. Spritz chicken and tomatoes with lemon juice, put juice in spray bottle. Cover and let cook 2 hours. Put the remainder ingredients in slow cooker. Cover and cook on high for 45 minutes until sweet potatoes are tender.
