Introduction

Number of Servings: 4

Ingredients

    12 oz chicken breasts, cut into strips
    1/4 tsp garlic salt
    1/4 black pepper
    2.5 cups broccoli slaw mix (or one package of 10 oz)
    1/2 tsp ground ginger
    3 tbsp creamy peanut butter
    2 tbsp water
    1 tbsp low-sodium soy sauce
    1/2 tsp minced garlic

Tips

Feel free to add more veggies or change the meat to whatever you have on hand. Very versatile dish and simple to throw together!


Directions

Cut the chicken into strips/smaller pieces, place into a saute pan over medium heat. Add the garlic salt and black pepper and let the chicken cook for 6-8 minutes, until no longer pink in the middle. Place in a dish off to the side. In the same saute pan, turn the heat to low and add the broccoli slaw miz and 1/4 tsp ginger and cook until the veggies are nice and crisp (about 3-5 minutes). While the veggies are cooking, in a saucepan, combine the peanut butter, water, soy sauce, minced garlic, and remaining ginger and whisk over low heat until the mixture has a smooth, creamy texture and the ingredients are all incorporated together. Place into a serving dish. Once the veggies are done, place in the bowl with the chicken and toss. On 1 lettuce leaf, use 1 tbsp of the peanut sauce and about 3/4 cup of the chicken/slaw mix and enjoy!
