Introduction

This chicken salad is sweet and low in fat. This chicken salad is sweet and low in fat.
Number of Servings: 4

Ingredients

    1/2 cup plain, low fat yogurt
    4 teaspoons skim milk
    1 teaspoon white wine vinegar
    1/4 teaspoon curry powder
    2 cups chopped boneless & skinless chicken breast (cooked)
    1/4 cup sliced celery
    1/4 cup sliced red onion
    4 leaves of leaf lettuce
    2 large peaches

Directions

In a small bowl, combine yogurt, milk, vinegar and curry powder.

In another bowl combine chicken, celery, and red onion; Add enough dressing to moisten.

Chill chicken and remaining dressing (in their separate bowls).

To serve, place 4 individual lettuce leaves onto salad plates. Peel peaches and cut into 8 pieces. Arrange 4 peach wedges in spoke fashion on each plate.

Place about 1/4 of chicken mixture onto the center of each plate. Drizzle remaining dressing over salads.

    Incredible!
    This is delish! I made a couple of changes to make it more "portable" for my lunchbox (cut up the fruit and mixed it all in with the dressing in a big bowl). I also used nectarines instead of peaches as I just bought a bunch at the farmer's market. This is one of the best Chicken Salads EVER! - 8/8/11

    This sounds really good! Honestly, I don't know what curry powder tastes like (maybe I do, I just haven't realized it), but I really want to try this! Tjis is definitely a dish I'll be making this year for school! Thanks. - 8/8/10

    Very Good
    I really liked this dish, especially the curry yogurt sauce. Serving with lettuce did nothing for me so next time I will cut the dressing in 1/2 so I have enough to coat the chicken only. I am not too sure about the calories though...seem a bit low. - 7/1/09
