Introduction

Ingredients

    4 med organic baby red potatoes
    1 tbsp unsalted butter
    1/2 tsp sea salt
    1/4 tsp ceylon cinnamon (optional)

Tips

You don't really taste the cinnamon, it just adds a bit of flavor. If you're fat-shy you can swap out the butter for low-fat margarine.


Directions

Wash and slice baby red potatoes. Don't peel them - the skin has a lot of nutrients in it! (Organic is better for leaving the skin on to avoid pesticide residue.) Boil for 20 minutes, then remove from heat and drain. Put potatoes in a big bowl and smash with butter, sea salt, and (if you like it) a little cinnamon.

Serving Size: Makes 4 3/4-cup servings.
