Ingredients

    1 cup almonds
    12 dried dates
    1 cup Sunmaid Dried pineapple
    1/2 cup shredded coconut

Tips

These are great for lunches and stay firm if kept chilled. You can let them get warm, but they tend to get gooey.

Directions

1. Place almonds, dates and pineapple in food processor. Pulse to break up large pieces.
2. Once pieces are broken up, add coconut. Process until mixture forms a ball.
3. Place mixture on wax paper. Place another piece on top and flatten to a thickness of approximately 1/4 to 1/2 inch.
4. Place flattened mixture in refrigerator and chill at least 5 hours or overnight.
5. Once chilled, remove from refrigerator and remove top sheet of wax paper. Cut into 10 even slices.
6. Wrap each slice in wax paper and store in an airtight container. Keeps in refrigerator for 2-3 weeks, or can be frozen up to 3 months.
