Ingredients
-
2 6-inch white corn tortillas
1 Tbs pizza sauce
2 Tbs monterey jack cheese, shredded
3 turkey pepperoni slices
1/4 cup red bell pepper, diced
seasonings to taste (oregano, red pepper flakes, garlic, minced onion)
Tips
You can also brush olive oil directly on tortillas, rather than placing it in the pan.
Directions
-Put a dab of olive oil (about 1 tsp) in nonstick pan. Place one tortilla in pan on top of oil.
-Add pizza sauce, cheese, pepperoni slices, and bell pepper. Sprinkle seasonings. Top with second tortilla.
-Turn pan to medium and let cook for 3-5 minutes, until cheese is starting to melt and bottom tortilla becomes crispy.
-Carefully flip the quesadilla and cook additional 3-5 minutes, until desired crispiness.
-Remove from pan and cut into quarters.
