Introduction

Ingredients

    12 cups green cabbage (about 2 pounds) chopped fine
    2 teaspoons salt
    2 Granny smith apples, cored and cut into matchsticks (leave the skin on)
    2 scallions, sliced thin
    1/4 cup vegetable oil
    1/2 cup cider vinegar
    1/2 cup sugar
    1 tablespoon Dijon mustard

Tips

I would prefer it a little less sweet and a little more tart, so I might try using just 1/4 or 1/3 cup sugar next time.


Directions

Toss cabbage and salt in a colander and let drain for about an hour, until slightly wilted. Rinse cabbage under cold water and drain and let dry. Add apples and scallions.
Put other ingredients in a saucepan over medium heat until mixture boils. Pour over cabbage mixture and toss. Cover and refrigerate at least one hour and up to one day.
