    1 1/2 cups gluten free flour
    c. Flax seed (ground)
    c. ground almond meal (grind up almonds)
    1/3 cup chia seeds
    c. each sunflower seeds and walnuts
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 tsp cinnamon
    1/8 tsp nutmeg
    1 egg
    1/3 cup brown rice syrup or agave syrup
    2 TBS. dark molasses
    2 TB palm, oil or canola oil
    2 TB coconut oil
    1 cup applesauce
    1 cup pumpkin or butternut squash puree
    1/2 cup coconut or almond milk
    1 tsp pureVanilla extract


Preheat oven to 425F.
In large bowl, combine flour, wheat germ, chia seed, baking powder, baking soda, salt, cinnamon and nutmeg. In medium bowl, beat egg with brown rice syrup, oil, applesauce and milk.
Mix with dry ingredients just until evenly moistened. Spoon into muffin tins. Bake for 15 to 17 minutes.
