Number of Servings: 16

Ingredients

    1 c. oat flour
    ½ tsp baking soda
    1.5 tsp baking powder
    ½ tsp each: cinnamon, nutmeg, cardamom, ground ginger
    ½ tsp sea salt
    2 lg ripe bananas mashed
    1/4 c. of molasses / ¼ c. agave
    1/3 c. of tofu (egg substitute)
    ½ c. of applesauce
    1 T. melted coconut oil
    1 T. espresso
    2 T. grated fresh ginger
    1 tsp vanilla extract
    ¼ c. each: chopped nuts chocolate chips
    2 T. candied ginger

Tips

This is best right out of the oven, warm. And equally yummy cold !


Directions

In lg bowl, combine dry ingredients.
In sm bowl, beat bananas, sugars, tofu, applesauce , oil, ginger, vanilla and coffee.
Mix wet into dry ingredients.
Fold in: nuts, chocolate chips and candied ginger

Bake in sprayed 8X8 inch pan at 350 for 40-45 minutes.
