Ingredients



    6 oz. Tru Roots ancient grain pasta
    2 tsp Olive Oil
    1 med Yellow Onion
    1 Green Bell Pepper
    1 small Zucchini
    2 tsp Chopped Garlic
    1 lg Can Diced Tomato
    1 can Worthington Loma Linda Tender Bits, about 24 pieces
    1 can Black Olives
    1 can Chick Peas
    1/4 cup Pesto Sauce
    1 tsp Oregano, ground
    Black and Cayenne Pepper to taste

Tips

The quinoa pasta tends to fall apart easily, so it is better to serve the rest of the dish as a sauce over the pasta.


Directions

Cook pasta according to package directions. While pasta is cooking, saute fresh veggies in 2 tsp. olive oil. Add remaining ingredients to sauteed veggies, and simmer for a few minutes, until heated through. Serve over the pasta, or stir pasta into the dish.
