Ingredients

    I slice sandwich ham
    1 egg
    1 tbsp shredded sharp cheddar cheese
    salt and pepper

Directions

Preheat oven to 350 degrees. Spray muffin tin with pam. Place ham in the bottom of the tin, pressing it down in until it forms a cup. (It will overhang the sides.) Crack egg in ham, sprinkle cheese, salt and pepper. Place in oven and bake for 20 minutes. Eat while hot!

Serving Size: Makes 1 "muffin"

    Incredible!
    Very easy and it feels like a splurge for a mid-week breakfast. I used high sided muffin tins so the egg missed the nest, but they still hold together well. Next time I'll use a standard muffin tin. - 1/19/16

    Very nice! I used light cheese for me and regular for my Atkins hubby. A recipe that worked for both of us. Easy and fast. - 9/26/15
