Ingredients

    black beans 1 28 oz can
    i can diced tomatoes drained
    1 tsp ground chipotle pepper if desired or to taste
    2 tsp ground cumin
    1/2 cup chopped cilantro
    salt to taste
    juice of 1 lime or to taste
    veg oil for frying
    flour and fine cornmeal for dusting
    garnish w salsa sour cream or cilantro sprigs if desired

Directions

drain beans and thoroughly mash or puree them with diced tomatoes. add cumin chipotle pepper cheese cilantro and salt and lime juice to taste. refrigerate at least 15 min; then form into cakes about 1/2 inch thick and 3 inches across. dust w flour and place on wax paper. (if still difficult to handle return them to fridge until firm). heat enough oil to cover bottom of heavy skillet generously (i estimated w nonstick skillet). Dust cakes w cornmeal then fry over med heat until they form a crust about 10-12 min a side. garnish w spoonful of sour cream and sprigs of cilantro and serve w salsa. i did not include garnishes sour cream or flour and cornmeal in calculator; however low fat sour cream is 40 cal for 2 tbsp which is plenty for garnish and brings total to around 300 cal a serving still not too bad! serving size is 2 cakes.
