Introduction

I love carbs and baked goods. Who doesn't? The problem with eating (mostly) paleo is that you can't have grains, so baking can be a bit difficult. I tried a lot of muffin recipes, and then finally decided to invent my own. And it was awesome! I tried a few variations, and this was the best. These muffins are moist and sweet enough that any grain-eating individual probably won't even know that they're paleo! The only problem with them is that you might have trouble not eating them all!

Anyhow, I hate recipes where the author goes on forever about the recipe's back story and you basically have to read a book to get to the recipe, so let's get to it!

Ingredients

    Wet Ingredients:
    3 Very ripe bananas
    1 Cup applesauce
    1/4 Cup almond butter
    1/2 Cup honey (preferably raw)
    2 Eggs
    2 Teaspoons vanilla

    Dry Ingredients:
    2 1/2 Cups almond meal (I just toss raw almonds in a food processor and process until mealy)
    1/4 Cup ground flax seed
    2 Teaspoons baking powder
    Dash of salt
    3/4 Cup chopped dates
    1/2 Cup chocolate chips (paleo-friendly ones)

Tips

Couldn't find a paleo chocolate-chip option on Spark People, so nutritonal information may vary.


Directions

Preheat oven to 350°. Line muffin tin with baking cups.
In large bowl, mix dry ingredients
In separate bowl, mash bananas (I use a fork) and mix in remaining wet ingredients.
Slowly stir the dry ingredients into the wet ingredients until mixed well.
Scoop batter into muffin tin (fill each cup about 3/4 full).
Bake for 15 minutes, or until tops start to brown slightly
Let cool, then eat!
