Ingredients

    2 C white flour
    1 C whole wheat flour
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    3 tsp. cinnamon powder
    3 eggs
    2 cups grated zucchini
    3/4 C. oil
    1/4 C. water
    3 tsp vanilla extract
    2 C. sugar

Tips

You can probably swap out some or all of the oil with applesauce to cut fat. The bread was very sweet. I may cut out half a cup of sugar next time too.


Directions

sift the flours, baking powder, baking soda, cinnamon and salt together. In a separate bowl mix the eggs, oil, water and salt together. Add wet ingredients to dry ingredients. Fold in the zucchini and the walnuts.
Put in a greased 9 x 11 pan. Bake at 325 for about 45 minutes.

Serving Size: Cut a 9 x 11 pan into 4 x 8 pieces. 1 piece = 1 serving
