Ingredients

    8 small chicken thigh cutlets, deboned
    Tin of indian flavoured tomatoes
    1 bay leaf
    2 teaspoons of Branston pickle
    1 teaspoon of tomato puree
    1 medium sized onion
    1 clove garlic
    2 tablespoons curry powder
    1 teaspoon ginger podwer
    2 teaspoon cumin
    2 tablespoon of coconut milk powder

    Rice to serve (basmati)

Tips

Serve with ric and salad


Directions

Put all ingredients EXCEPT the milk powder into a large saucepan and bring to the boil. Cover and simmer for 45-60 minutes until chicken soft and flavour infused. Add milk powder, stir through and leave uncovered for 5 more mins.
