Number of Servings: 1

Ingredients

    3 cups Organic Baby Spinach and Arugula Mix
    1 cup cooked whole wheat rotini
    1 roman tomato diced
    1 cucumber peeled and sliced
    1 tbsp. capers, drained
    1 tbsp. balsamic vinegar
    1/2 tbsp. olive oil
    1 tbsp. shredded parmesan cheese

Tips

I don't rinse the pasta after cooking. Great for a side salad with chicken parmesan also.


Directions

Boil pasta in salted water according to package directions. Drain and let cool

In a medium salad bowl, combine pasta, baby greens, tomatoes, capers, olive oil, vinegar. Toss well then add parmesan cheese.

Serving Size: makes about 1 serving..about 4 cups
