Introduction

These are my quick and easy Veggie Cheese Quiches. I received a My Lil' Pie maker and realized that pies are not Spark People friendly for the most part. Modifying greatly a recipe in the book that came with it (different ingredients, quantities, and no milk), I was able to concoct this recipe that fits into my life and diet just fine! Broccoli instead of mushrooms make some friends and my daughter happy, and this way you can make them different but at the same time, just saute' separately! Ingredients

    4 slices white bread (crusts removed)
    1 1 oz. mozzarella cheese stick, divided into fourths
    2 Fresh medium mushrooms, cut up (or two broccoli florets, chopped)
    2 thin slices raw onion, ringed or chopped
    2 chopped cloves of garlic
    2-3 leafs fresh spinach (depending on size)rolled together tightly and sliced through into julienne strips
    barest pinch Coleman's Dry Mustard
    pinch of ground Cayenne pepper
    4 large egg whites, lightly beaten (or you can just add one to each pie if you prefer)
    2 Tablespoons shredded Colby Jack cheese

Tips

Great served with a side of fruit, and very satisfying! No added salt, but spices make the dish quite savory. You can always substitute a couple chopped broccoli florets for the mushrooms, if you want. Nice brunch or party fare.


Directions

Pre-heat oven or toaster oven to 375 degrees Farenheit.
Add the silicone bottoms to the My Lil' Pie Maker and press one slice of crustless bread into each cup, flatten with fingers. Into each "pie" shred one quarter stick of mozzarella.
In a saute pan sprayed lightly with non-stick spray (or I just use my orgreenics pan), add onion, mushroom or broccoli, garlic and spinach. Cook until onion is just clear and mushrooms are soft (about a minute or two). Spoon one quarter of the vegetable mixture into each pie. Sprinkle the barest pinch of mustard across all four pies. Also sprinkle a pinch of Cayenne powder across all four pies. Add one quarter of the beaten egg white mixture to each pie (or add one egg white to each if you prefer). Top each with 1/2 Tablespoon of shredded Colby Jack cheese. Carefully transfer to oven or toaster oven.
Bake 20-25 minutes til done. 22 is perfect for my toaster oven. Remove to a flat pan or cookie sheet with potholders. Let rest a couple minutes before removing pies from silicone pan.

Serving Size: Makes four Lil Pie Maker quiches. One quiche is one serving.
