Number of Servings: 4

Ingredients

    2.5 cups lowfat cottage cheese
    1 can (15.5 oz) pumpkin
    ~ 15 packets splenda (adjust all to taste)
    1 T cinnamon
    1 T pumpkin pie spice
    1 t vanilla extract

Tips

I love making what I call creamy pumpking pie oatmeal. This here is just me premixing the cottage cheese and pumpkin to speed things up even more in the morning. Also makes a great snack without the oats added.


Directions

Mix everything together well, taste and adjust sweetner and spices. You may want to use a little less than the whole can of pumpking. Remember, you can always add more it's harder to take out.

This can be enjoyed many ways. Either cold and out of the fridge, or I love adding quick oats (.25-.5 cup dry) and a little water and this thickens up for a very nice and creamy oatmeal porridge in the morning.

Great way of getting protein and a vegetable serving with breakfast.
