Introduction

A remake of the microwave flaxseed muffin in a cup recipes. While I love the idea of those recipes, I am not a fan of the psyllium texture so replaced half of the flaxmeal with wheat germ and oats. Ingredients

    1 tsp. olive oil
    1 egg, slightly beaten
    2 tbsp. ground flaxmeal
    1 tbsp. wheat germ
    1 tbsp. rolled oats
    1 tsp. ground cinnamon
    1 tsp. blackstrap molasses
    1 tsp. stevia
    1/2 tsp. baking powder

Tips

I made this in a "soup mug", with a wider base so that the muffin would be shallower and wider, hoping it might cook more evenly. It turned out great, so it must have worked!


Directions

Spray inside of mug with non-stick spray. Beat egg slightly and mix in remaining ingredients. Pour mixture into sprayed mug and microwave for about 2 min (times will vary).
