Introduction

This is amazing served over coconut rice! If the sodium level is too high for your preferences, you can reduce the amount of soy sauce and replace with olive oil or water. Ingredients

    2 tsp minced ginger
    1 clove garlic, chopped
    1/4 cup low sodium soy sauce
    1 TBSP honey
    10oz (half can) of no sugar added pineapple chunks - reserving 3 TBSP of juice
    16oz boneless skinless chicken breasts
    1 green bell pepper
    1 red bell pepper
    1/4 red onion

Directions

Combine ginger, garlic, low sodium soy sauce, honey and reserved pineapple juice. Mix well and set aside. Chop all vegetables and chicken into bite size pieces. Marinade vegetable. chicken and pineapple chunks in soy sauce mixture for 2-4 hours. Soak skewers in water if using wood for at least 30 minutes. Skewer meat, veggies and pineapple. Grill over medium high until chicken is cooked through.

Serving Size: makes 8 skewers so 2 skewers each
