Introduction

a frozen dessert made with a blender. all fruit is frozen before you start. I used strawberry, banana and mango but any fruit would do. I wouldn't substitute the bananas, that is what gives it the creamy sweetness. You can't taste the tofu - honest!I used goat milk because that is what we drink but you could use any milk, coconut, almond, soy. You kind of need it to keep the blender going (add a little at a time) I made a ton because I didn't want to make it everyday but I want to eat it often and my family love it! Ingredients

    for 4 servings use Frozen fruit...
    4 bananas
    300g strawberries
    60g mango
    1tsp limade concentrate
    8g soft tofu
    10ml carnation evaporated milk
    milk and or yogurt or coconut, soy or other fluid to keep the blender going about 50ml or less



Tips

I made a 4l bucket and put it in the freezer. I used 1kg bananas, 1kg strawberries 500g mango, 1 can evaporated milk, 1 300g pkg soft tofu, about 1 cup milk/yogurt. I blended in batches, added to my 4l icecream bucket then remixed everything with an immersion blender to combine. It took a bit of co-coordinating but now I have lots to add to smoothies and have a cool low cal protein snack after supper when my family is eating ice cream.


Directions

have all fruit frozen. You can cut them into smaller sizes to help your blender then keep frozen. combine the tofu and canned milk and put in the freezer until very cold or just icing over (about 1/2 hour). Put fruit/limeade in blender. Blend on high while slowly adding the tofu/canned milk mixture. If needed add more milk/yogurt/coconut milk/water/juice to keep it going until well blended and creamy. pour into individual cups and return to freezer for about 15-20 minutes before serving.

Serving Size: makes 4 servings about 100g each (1/2 cup)
