Introduction

Super easy pot roast, with tons of flavor -- and my kids LOVED it! Super easy pot roast, with tons of flavor -- and my kids LOVED it!
Number of Servings: 12

Ingredients

    4 lb top roast, trimmed
    30 baby carrots
    3 stalks celery, large chopped
    3 lb red potatoes, chopped
    9 cloves garlic, smashed and sliced
    1 large yellow onion, large chopped
    1 c beef broth (low sodium)
    3 bay leaves
    1 T pepper

Directions

Makes 12 very generous servings

Chop celery and potatoes to bite size pieces. Smash garlic cloves to remove peel, then slice into 2-4 pieces. Remove the skin from the onion and cut into large pieces.

Add all veggies (including carrots) to crock pot first. Add beef on top. Slice in half to fit, if needed. Add beef broth, pepper, and bay leaves.

Cook on low for 8 hours and enjoy. It's great the next day, too!
