Introduction

Ingredients

    1 lb ground chicken
    2 green bell peppers, chopped
    1 onion, chopped
    1 tsp salt
    1 tsp pepper
    1 tbsp oregano
    2 tsp garlic powder
    2 tsp onion powder
    1 tbsp minced garlic
    4 cups spaghetti sauce
    15 oz part skim ricotta cheese
    2 cups part skim mozzarella cheese, (divided into 1 cup each)
    1 egg
    1 tbsp grated Parmesan cheese
    1/2 box whole wheat lasagna noodles, (about 8 noodles total)

Tips

To add extra veggies, place uncooked spinach leaves and/or fresh basil leaves in between layers. Sprinkle some oregano on top of lasagna before placing lid on to cook.


Directions

Brown ground chicken, onion, bell peppers in skillet, (took about 10 min to brown meat). Add spaghetti sauce, minced garlic, onion & garlic powder, salt & pepper, & oregano. Simmer for about 10-15 minutes. While sauce is simmering, mix ricotta, only 1 cup mozzarella, parmesan cheese, and egg in a bowl. Spray crockpot with cooking spray. Start layering meat sauce, noodles, and ricotta mixture. I think I had 3 layers total with the meat sauce being the last. Top with remaining 1 cup mozzarella cheese. Cook on low in crockpot for 3 hours.
