Introduction

Not thick enough to be a chili, this spicy chicken and bean soup is a quick and easy slow-cooker recipe. I use a dry bean blend from Costco, but any dry bean mix will do.

Ingredients

    * 1 cup dried beans, soaked for at least 4 hours
    * 1 can of diced tomatoes, with jalapeņos for added spice
    * 2 cups of water
    * 1 chicken breast (2 half breasts), frozen okay
    * 1 tbsp cumin
    * 1 tsp cayenne
    * 1 tsp of chipotle chili powder (hotter than regular chili powder)
    * 1 tsp of chopped garlic or garlic powder (not garlic salt!)
    * 1/2 a chopped onion or 2 tsp of dried onion flakes

Tips

Warning: I like my soup pretty spicy! You may want to reduce the hot spices if you have milder tastes.


Directions

After soaking the beans for at least 4 hours, place all ingredients into slow cooker. Cook for 8 hours, or until beans are tender and chicken shreds. Remove chicken breasts from slow cooker and shred with a fork. Return to soup, and stir to mix.

Enjoy with corn bread, crusty bread, or top with sour cream. Yum!
