Number of Servings: 8


    Beans, white, 4 cup (2 cans)
    Onions, raw, .5 cup, chopped
    Carrots, raw, .5 cup, chopped
    Celery, raw, .25 cup, diced
    Garlic, 1 clove
    Green Peppers (bell peppers), 0.5 cup, chopped
    Plum Tomatoes, 2 peeled and chopped
    Chicken Drumstick, 8, skin removed
    Olive Oil, 2 tbsp

    Makes 8 servings.


Do not open your crock pot lid, as this lets most of the heat out, and you're cooker will have to reheat all the air inside when the lid is put back on. This adds to cooking time!


Combine all ingredients in slow cooker; add seasonings to taste (I used salt, pepper, tarragon, parsley, thyme and cumin). Cook on low 3 1/2 to 4 hours.

Serving Size: One chicken leg and 1/2 cup of the bean mixture.

To reheat, I like to pull the meat of the bone and mix it into the beans, then reheat on the stove top or in the microwave.
