Ingredients

    1 cup egg whites
    about 1/2 cup diced fresh Tomato
    1 full serving of Sticks' Mango Salsa (http://recipes.sparkpeople.com/recipe-detail.asp?recipe=2557939)

Directions

Cook the eggs flat, flip like a pancake to make a frittata looking egg pancake. Place the tomatos on top cold when plated, and then daub the salsa on top.

Add pepper as desired and devour!
