Ingredients

24 thick stalks of asparagus (about 1 bunch)
1/2 T. olive oil
1 T. grated parmesan cheese
Fresh-ground black pepper
3 ounces prosciutto (6 paper-thin slices)
Tips
Use a lower-sodium prosciutto, if you can find it!
Directions
Preheat the oven to 400 degrees
Cut an inch or so off the asparagus and place on a heavy baking sheet. Drizzle with olive oil, sprinkle with parmesan and a little pepper, and toss. Roast until the asparagus is tender, about 10 minutes. Cool completely.
Cut prosciutto slices lengthwise and then widthwise into 4 pieces (for a total of 24 pieces). Wrap each asparagus with a piece of prosciutto, laying the asparagus on the prosciutto at an angle and leaving the tip exposed. Arrange on a platter and serve at room temperature.
