Ingredients

    1/3 cup honey
    1/4 cup molasses
    1/4 cup coconut oil
    2 eggs
    1 banana
    3/4 cup plain yogurt (2% greek)
    1 tsp vanilla
    2 cups grated zucchini
    2 cups whole wheat flour
    1/4 cup ground flax seed
    1/2 cup unsweetened cocoa powder
    1/2 tsp salt
    2 tsp baking soda
    1 tsp cinnamon
    1/4 cup chocolate chips

Directions

Preheat oven to 375. shred zucchini and squeeze out excess moisture with paper towels. Mix wet ingredients together with a stand mixer (or hand mixer), incl. the zucchini. In a separate bowl, whisk together the dry ingredients and add to wet. Lastly, add the mini chocolate chips and stir just until incorporated. Spoon into greased muffin tin or cupcake liners; fill each well halfway (a large cookie scoop works well). Bake for 20-25 minutes or until a toothpick comes out clean.
