Introduction

Number of Servings: 4

Ingredients

    2cups FF broth
    2 cups water
    3/4 cup diced onions
    3/4 cup diced celery
    10 ounce frozen asparagus spears thawed
    1/4 cup white rice
    Dash of white pepper
    Dash of nutmeg
    3 tbsp FF sour cream

Directions

In a large saucepan put in about 2 ounces of the FF broth and add onions and celery and cook until soft. Add the remainder of the FF broth and the water and bring to a boil. Cut the tips off the asparagus and set aside. Cut the stems into 1" pieces and place in the boiling liquid along with the rice and boil until
asparagus is tender about 20 minutes.. Cool slightly and put into blender or processor along with sour cream and blend until smooth. Add dash of nutmeg and pepper. Put back into pot and add asparagus tips and simmer until slightly cooked but still crisp. Yields 4 servings.
