Ingredients

2 whole eggs
1/4 c. water
1/4 c Natures Simply Egg Whites (about 2 egg whites)
6 slices Butterball Turkey Bacon chopped
1c chopped spinich
1/2 c. chopped mushrooms
1/4c. diced onions
1 garlic clove minced
2 oz grated or shredded cheddar cheese
1 pinch of salt and pepper
1 large diced cold tomato for topping
Tips
Note
If you don't have a nonstick muffin pan, use a regular muffin pan sprayed with cooking spray instead.
**These are delightful and easy to freeze. Pop them in the microwave for a minute or two and run out the door for a great quick breakfast.
Directions
HEAT oven to 325ºF.
Beat whole eggs and 1/4 cup of water for 2 minutes. Add the egg whites and continue to beat for another minute or two in large bowl until well blended; add and stir in all other ingredients to the egg mixture except the grated cheddar cheese and tomato.
POUR into 12 nonstick muffin cups. Top with Cheddar Cheese lightly on each quiche evenly.
BAKE 40 min. or until tops are puffed and lightly browned.
REMOVE from muffin tins and serve with cold tomato topped to your delight.
