Ingredients

1 tablespoon olive oil
1 large onion, finely chopped
1 garlic clove, finely chopped
1 1/2 cups long-grain white rice
1-16 oz. can black-eyed peas, undrained
1 - 28 oz. can diced tomatoes, drained
1 1/2 tablespoons chili powder
1/2 teaspoon cumin
1 teaspoon crushed dried oregano
1/4 teaspoon cayenne pepper
3 cups water
dash salt, pepper
Directions
Add olive oil to large pot, over medium heat.
When oil is hot, add onion and saute until translucent, about 5 minutes. Reduce heat add garlic, about 2 minutes.
Add remaining ingredients, and bring to a boil over medium-high heat, stirring occasionally.
Reduce the heat and simmer, partially covered, until the rice is tender, about 20 minutes, stirring occasionally to ensure that everything is evenly distributed. Season with pepper to taste.
Serving Size: makes 8 - 1 cup servings
