Ingredients

    1 roast beef
    1 pkg fajita seaoning
    1 large onion (I used a sweet Mayan.)
    1 large red sweet pepper
    1/2 cup water
    1 24 oz bottle salsa
    1 can, 15 oz black beans drained & rinsed

Tips

I cooked up a batch of brown rice or quinoa. Shredded cheese for topping if desired. Served on tortilla wraps.


Directions

Place 1/2 cup water in bottom of crock pot.
Add roast.
Sprinkle fajita seasoning over the roast.
Pour jar of salsa over all.
Chop up large onion. Add.
Chop up large pepper. Add.
Pour black beans on top.

Cook @ 6hrs on low.
When done, shred the beef and blend into cooked sauce.

Serving Size: Makes about 12-15 fajitas with the fixin's
