Ingredients

    Pumpkin Black Bean Soup
    1 T canola oil
    1 yellow onion chopped
    4 cloves garlic chopped
    1 T cumin
    1T chipotle chili powder
    4 cups chicken or vegetable broth
    2 cups pumpkin puree
    1 19 oz. tin black beans, drained and rinsed
    1 28 0z tin chopped tomatoes-low sodium

Tips

I freeze in 1 cup containers for a quick to pack lunch if I am called to work.


Directions

Saute onions and garlic in oil until soft. Add spices and stir lightly. Add broth, pumpkin, beans and tomatoes and simmer about 30 minutes, stirring occasionally. Cool slightly and puree in blender. Reheat and serve. A garnish of plain Greek yogurt and a few pumpkin seeds tops this soup off nicely--but is not included in the nutrient list.
