Works for any meal, and freezes great. Works for any meal, and freezes great.

    6 large eggs
    7 ounces carrots
    8 ounces zucchini
    8 ounces summer squash
    4 ounces grape tomatoes
    1 cup chopped onion
    5 garlic cloves
    1 tablespoon butter
    2 ounces of mixed lettuce
    1 cups shredded cheese.


Saute the onions and garlic in 1 tablespoon of butter. Then add all ingredients to a food processor, one ingredient at a time, till completely mixed. Then spoon into oiled muffin tin. Bake at 350 for 20 to 25 minutes.
