Ingredients

    3 lb Corned beef, brisket
    6 cups Carrots, raw
    6 small Potatoes
    1 large head of Cabbage
    1 large onion cut in quarters

Directions

Serves 6. Place the corned brisket is a large stock pot. Cover with water and bring to a boil. Cover and reduce heat to low. Simmer for about 3 hours. Add 6 cups of carrots cut into 3" - 4" long pieces, Potatoes that have been washed and quartered, the washed and quartered cabbage and the onion. Add more water if needed to cover all of the veggies. Bring to a boil. Reduce heat to low and simmer for 30 minutes or until the carrots will accept a fork. If more people drop in for dinner, add more veggies.

    I made this recipe for New Years. In reality, this makes a lot more than 6 servings. I took it to a party and probably had a dozen people eating off of it. A head of cabbage is a lot of cabbage. To be more realistic, eat less meat, more cabbage, potatoes, and corn and count it as half a serving. - 1/2/09

    I made this dish, also in my crockpot. Have to agree, the calorie count is high. Just to have 3 oz. of corned beef = 213 calories according to Spark nutrition tracker. At 6 servings, that means 8 oz. of corned beef/serving, so I suppose it would top close to that many calories! - 3/17/08

    I made a similar dish today, without the carrots, twice the onions, and with a lot less (1/4 lb.) corned beef. But the calorie tracker had a lot less calories, this amount seems way too high! Is this really the right amount of calories? - 3/17/08
