Ingredients

    1 PInt of medium or larger mushrooms
    2 Boneless, Skinless Chicken Breast
    1/3 lb Angus Beef Stir Fry Strips
    1/2 of a fresh pineapple
    1 green pepper
    10-12 Raw Large Tiger Shrimp
    1/2 sweet onion
    1 Cup of favorite sweet/spicy marinade (i use World Harbors Cuban Style Mojo) (the nutrition info is for 5 tbsp because most of the marinade is left over)


Directions

cut chicken and beef into 1 inch-ish cubes
pour marinade over beef, chicken and shrimp and put in fridge to marinate for 4 hours. if using bamboo or wooden skewers soak them for at least an hour to prevent smoldering the skewer ends

cut vegetables and pineapple (except mushrooms) into chunks about 1 inch square. take out marinated meat and remove meat. pour remaining marinade over vegetables and pineapple. skewer all the ingredients in any order.

grill or broil (on a foil lined cooking pan) for 20-25 minutes or until the shrimp turn a pale pink.
