Ingredients

1-1/2 lb. Cooked lean roast beef, diced
3 cups diced potatoes
2 cups diced carrots / baby carrots
1 cups diced onion
1 cup diced celery
2 cups frozen cut green beans
1 15 oz. can crushed tomatoes
1 32 oz. container low-fat Beef Broth
2 cups water
1 pkg. McCormick Slow Cookers Vegetable Beef
Soup Seasoning Mix
2 Bay leaves
Tips
I used cooked beef to use up leftovers. You can use stew meat instead (trimmed and cut into 3/4 inch cubes), but may have to adjust the nutrition information.
Directions
1. Place beef and vegetables in slow cooker.
2. Pour crushed tomatoes over top.
3. Pour beef broth over top.
4. Mix Seasoning Mix with water - pour over top.
5. Place 2 bay leaves in crockpot.
5. Cook on LOW for 8 hours.
6. Remove bay leaves & stir before serving.
Serving Size: makes 16 1-cup servings
