Introduction

Ingredients

2 cups sweet potato, peeled and thinly sliced
2 tablespoons flour
6 oz turkey sausage
2 cups kale chopped
1 cup mushroom sliced
1 cup onion chopped
4 large eggs
4 large egg whites
1/2 cup low fat milk
1/2 cup low fat cheddar cheese
1/2 teaspoon salt
dash black pepper
3 garlic cloves chopped fine
dash nutmeg
Directions
1. Preheat oven to 450
2. Dust sweet potato with flour, layer in buttered pie dish. Bake for 30 minutes until tender.
3. In a large frying pan, cook sausage until done. Remove and set aside
4. Add onion to the pan cook about 5 minutes until soft, then add mushrooms. Cook another 5 minutes. Then add kale, garlic and the cooked sausage to the mixture for another 5 minutes until kale is wilted.
5. Whip eggs, half & half, nutmeg, salt & pepper until frothy.
6. Top sweet potato crust with veggie mixture. Pour egg over the top then top with cheese.
7. Reduce oven to 400 and bake 20 minutes until egg is set.
