Ingredients

    Scrambled Egg, 4 large
    Bybee Foods Organic Mixed Vegetables w/shelled Edamame 1 ..., 3 serving
    Pork, fresh, loin, sirloin (roasts), boneless, separable lean only, cooked, roasted, 9 oz (any lean meat works for this)
    Vegetable Broth, 4 cup
    Avocado Oil, 4 tbsp
    Brown rice (1 cup cooked), 6 serving

Tips

Doesn't need much salt, if any. Sometimes I add a good amount of black pepper or red pepper flakes for a little kick.


Directions

Cook brown rice in vegetable broth (for added flavor with very little added calories) & let cool completely (overnight or a few hours in the fridge works best). Heat oil on med heat. Add veggies (don't have to be thawed but can be). Sautee until cooked through. Add choice of shredded/chopped lean meat & continue to cook until warm. Add the rice and cook to desired done-ness.
