Some people suggest soaking the almonds overnight, but I did not do this and found the butter to be perfect for my taste. The power of the Vitamix makes it easy to process the almonds with the addition of oil. Scrape the contents of the blender into a container. Store in the refrigerator. Keeps for about 5 days.
Directions
Poor 3 cups of almonds into a high-powered blender (Vitamix is what I use). Starting on variable 1, increase to 10 quickly and let it blend for about 1 minute at this speed.
