Introduction

Ingredients

* 2 Medium Raw Potatoes, sliced (i prefer yukon gold)
* 1 Medium Raw Onion, Sliced
* 3 cups whole wheat COOKED macaroni (or other noodle)
* 2 cups shredded Cheddar Cheese
* 1 cup shredded mozzarella Cheese
* 0.5 cup non-fat milk (soy milk works too)
* salt & pepper, to taste
Directions
Preheat oven to 350*F
Spray or line an 8 x 11 baking dish. Slice Potatoes and place on the bottom of the baking dish. Slice onions and do the same, layering them on top of the potatoes. Cover and spread the top with your cooked macaroni (or other pasta) and pour your milk over the top. Layer your cheeses on top making sure to cover the majority if not all of your pasta. Sprinkle with salt & pepper to taste.
Bake at 350*F for 30minutes ...enjoy! This recipe also tastes great the next day for lunch! SERVES 8
