Ingredients

    1 tspn. Coconut Oil
    Trader Joe's Whole Grain Flour Tortilla
    2 Eggs
    Whole Milk
    2 slices Canadian Bacon
    2 T Cabot's Seriously Sharp Cheddar Cheese Shredded
    1/2 C. Baby Spinach

Directions

Saute tortilla 1st on both sides with coconut oil. While sauteing scramble egg and cut up ham into bite size pieces. Remove tortilla from pan. Throw egg in to scramble it. Once mostly scrambled, push it to one side and add ham to pan. Then add cheese on eggs. Then throw spinach on cheese and mix it around to wilt spinach a little. Place it on tortilla and fold it over. Voila!
