Ingredients

1 lb Orange Roughy (or other firm white fish) cut into quarter-inch pieces
1 cup corn flakes (crushed) substitute a fiber flake for additional fiber
3 tbsp parmesan cheese
salt and pepper to taste
1 egg white
Directions
Preheat oven to 500 degrees
Beat egg white in bowl, in another bowl combine corn flakes, parmesan cheese, salt and pepper
Dip fish into remaining egg white
Dredge the fish in corn flake mixture
Place fish on cookie sheet sprayed with non-stick cooking spray
Bake in oven for 10 minutes
