    1/2 C. (1 stick) Margarine
    1/2 C. Sugar
    1 - 3 oz. Pkg Flavored Gelatin
    1 Egg
    1/4 tsp. Vanilla
    1 1/2 C. Flour
    1 tsp. Baking Soda
    1/4 tsp. Salt


Preheat oven to 375 degrees.

Beat margarine & sugar together. Add Jell-O, egg & vanilla. Combine Flour, soda & salt together, then gradually add to margarine/sugar mixture. Blend well. Roll into small balls (#60 scoop), place on cookie sheet & press lightly w/ sugar dipped juice glass. Bake 8 - 10 minutes.

  • My kids love these! Great, guilt-free cookies! There's a hint of flavor, but I made some changes to the recipe: half whole wheat/half white flour and I used butter shortening. Will make these again. I think fruit extract/zest would boost flavor. Makes a great ice cream or sherbert sandwich! - 7/18/10
