Introduction

This recipe (and the sourdough starter) have been passed down thru the women in my family for generations...it is a Saturday morning tradition in most of our homes to this very day! The leftover pancakes are great to make sandwiches out of or just pop in the microwave and reheat for another morning! Number of Servings: 14

Ingredients

    * 1-egg
    * 2-tablespoons sugar
    * 1/2-teaspoon salt
    * 1-teaspoons baking soda
    * 2-cups sourdough starter

Directions

(1) In a large mixing bowl, beat egg.
(2) In a separate bowl, add sugar, salt, baking soda, and water and mix until incorporated.
(3) Add the dry ingredients to beaten eggs.
(4) Add sourdough starter to mixture and beat with wooden spoon. Do not beat too long.
(5) Let sit for about 5-minutes until frothy. (this is the baking soda interacting with the sourdough starter) The batter will more than double by this time.
(6) Spoon on griddle in 1/4-cup amounts.
(7) When bubbles appear on top of pancakes, turn over.
(8) Cook until golden brown.

    Very Good
    Flavor was really good. The batter was thin, and the pancakes light, although we need to experiment more for the best griddle temperature. - 7/8/08
