Ingredients

3 oz low-fat silken tofu
1/2 cup unsweetened applesauce
1/4 cup mashed potatoes, room temperature
2 large bananas, chopped
1/4 cup brown sugar
2 tbsp maple syrup
1 tbsp grated fresh ginger
1 tsp vanilla
1 cup whole wheat flour
1 cup flour
1 tsp baking soda
1 tbsp baking powder
1 tsp ground cinnamon
1 cup fresh (or thawed and drained frozen) strawberries, diced
Directions
Preheat the oven to 375 F. Grease 12 large muffin cups and the top of the tin (these are biggies!).
Puree the tofu, applesauce, potatoes, bananas, sugar, syrup, ginger and vanilla. Set aside.
Whisk together the dry ingredients in a large bowl.
Pour in the pureed ingredients and stir gently until almost blended.
Fold in the strawberries gently.
Bake 20 minutes.
Cool 10 minutes before removing from tins.
