Ingredients

    Baking Soda, 1.5 tsp
    Baking Powder, .5 tsp
    Salt, 0.25 tsp
    Milk, nonfat (skim milk), .5 cup
    Vinegar, .5 tbsp
    Applesauce, unsweetened, 1 cup
    Pumpkin, cooked, 1 cup, mashed
    Egg, fresh, whole, raw, 2 large
    *Flour, white, 2.25 cup
    Granulated Sugar, 1.25 cup
    Cinnamon, 3/4 tsp
    ground cloves, 1/2 tsp
    allspice, 1/2 tsp

Directions

Spray a 13x9 pan with cooking spray.

Add vinegar to 1/2 cup of milk and set aside for a few minutes to become "buttermilk."

Stir together all dry ingredients. Mix in egg, applesauce, pumpkin, and milk. Spread in pan and bake at 350 for about 35 minutes, until toothpick comes out clean.

Cut into 12 pieces. Dust with a little confectioner's sugar or serve with whipped topping (not included in calories).

Serving Size: Makes 12 pieces
