Who says veggie chips have to be expensive or fried? These baked beauties are good for packing in a lunch, serving at parties or just nibbling on. These are beautiful, sweet n' salty chips you can feel GOOD about eating. Super-simple to cut down for 1 or 2! Who says veggie chips have to be expensive or fried? Number of Servings: 4

Ingredients

    4 large beets, scrubbed well but unpeeled
    PAM or other nonstick spray
    1 tbsp kosher salt, or to taste
    Black pepper to taste

Directions

Preheat oven to 400 F.
Slice beets very thin (I like using my mandoline).
Spread evenly on a lightly greased cookie sheet, spray with nonstick spray and season with salt and pepper.
Roast 45 minutes-1 hour, flipping chips halfway through.

    It's hard to get these to cook evenly, and it took less that 45 minutes. They are very tasty, though. - 12/20/09
