Ingredients

    Peel Eggplant and cut into 1/2" slices
    1 lb. ground turkey
    4 cups low carb prepared marinara sauce
    1 1/2 T. fresh oregano or 2 t. dried oregano
    1 t. fennel seeds
    1 1/2 cups fat free parmesan

Directions

Bake eggplant in 350° oven on cookie sheet sprayed with nonstick cooking spray approx. 30 minutes. Brown ground turkey. Pour in marinara sauce and add in oregano and fennel seeds. Layer the eggplant slices and turkey marinara sauce in a 9x13. Sprinkle with cheese on top. Bake until bubbling , about 30 minutes.
